Banana & Oat Gluten-Free Pancakes

When huge fluffy pancakes have been a big tradition in our household every weekend - going gluten and dairy free presents some issues!


No worries! I'm never one to miss out, so these little pancakes hit the mark every time.


There's no gluten and no dairy in these little beauties. They are packed full of protein - so a great post-workout breakfast too. This recipe doesn't contain processed sugar either. They are so good they need a halo!


They are really easy to make as well. I used my NutriBullet to whizz everything together. I've served them with coconut yoghurt with a little lime zest and berries.


A totally delicious breakfast! You'll never feel like you're missing out again!



Serves 1

Ingredients:

Pancakes:

1 ripe banana

20g oats

10g milled flax seeds

10g ground almonds

2 eggs

1 egg white

1 tbsp maple syrup

drop of vanilla extract


20g coconut yoghurt

1/2 lime zest

handful of berries



HOW TO MAKE:

Put all the pancakes ingredients in your blender and whizz. I used a little olive oil to cook the pancakes, but you could also use coconut oil if you prefer.


Serve immediately with the yoghurt and berries.
