Simple Overnight Oats

I've got a confession. I've been sneaking around at night. No one knows what I've been up to (they will now). But I've had a breakfast revelation and it starts the evening before - overnight oats!


Now that the weather is warmer and it's not the depths of winter anymore, porridge is off the menu, so as a summer alternative to the cooked comfort of porridge - overnight oats are a breakfast essential. And what could be better than just reaching into the fridge in the morning and having a ready-made brekkie!





The great thing about overnight oats is that you can add any flavours you like. I used mashed banana with fresh strawberries and a strawberry purée. I also lightly toasted some nuts and seeds and gave them a quick whizz to add a crunchy texture. Make a big batch of the toasted nuts and store them away for every morning.


These overnight oats are great for breakfast on the move to. Just make them the night before in a large jam jar, a Tupperware, or any container that can be taken with you. 

I think I will be making these overnight oats everyday now as they are super tasty and healthy. I'm just worried when the kids find out what I've been up to, as they will surely want in on my secret oaty breakfast!


STRAWBERRY & BANANA OVERNIGHT OATS


Ingredients:

For the oats:

1 banana, mashed

2 dessert spoons of porridge oats

1 dessert spoon of chia seeds - optional

2 dessert spoons of yoghurt of your choice

100ml milk of your choice (I use almond milk)


A few strawberries, whizzed up with 1 tsp of honey


For the nuts:

Hazelnuts

Almonds

Brazil nuts

Golden linseed

Sunflower seeds

Walnuts


The evening before, prepare the oats. Mash the banana into a bowl and add the oats, chia seeds, yoghurt, milk and mix. Place a few spoonfuls of the strawberry purée on top and cover. Leave in the fridge overnight.


For the nuts, toast them lightly in a frying pan. Leave to cool slightly and then give them a whizz.


In the morning, you can add some more strawberry purée to the oats and some fresh strawberries. Top with the nuts and enjoy!


I also like to top with a crunchy granola with berries or grapes and ground seeds are also lovely with mango.
