The BEST Crunchy Muesli Recipe!

This is a kind of a mix between muesli and granola - purely because I like a bit more crunch and texture in my breakfast than a pile of dusty old oats! And with this recipe, you can pretty much do what you like with it and put in your favourite ingredients.


You can use this recipe in so many different ways - with milk, grated apple, yoghurt, banana - there are so many options. Breakfast will never be boring again!





Ingredients:

1 tablespoon honey

2 tablespoons maple syrup

1 tablespoon mild olive oil

1 tablespoon coconut oil

2 teaspoons vanilla extract

500g porridge oats

50g sunflower seeds

50g pumpkin seeds

50g sesame seeds

40g ground almonds

80g Brazil nuts

100g raisins

50g dried cranberries

50g oat bran


HOW TO MAKE:

Put all the wet ingredients (including coconut oil) in a small pan and heat slowly until they are combined. Now place the oats, sunflower seeds and pumpkin seeds in a baking tray and pour over wet ingredients. Mix well and place in the oven for 10 minutes on 160C. Stir after 5 minutes.


Next, add the sesame seeds, ground almonds and Brazil nuts. Bake for a further 10 minutes, stirring halfway through again.


After 10 minutes, check that the mix is browned slightly, if not, leave in for another 5 minutes. Once done, take out of the oven and allow to cool completely.


Add the raisins, cranberries and oat bran and then store in an airtight container.
